KITCHEN VENTILATION:

Ventilation is the single most important factor in the design, construction and operation of commercial kitchens. Without adequate ventilation and an ample supply of clean makeup air, no kitchen will operate efficiently

The following objects are being considered while designing a kitchen ventilation system –

• To remove cooking fumes at the source.
• To remove excess hot air and to introduce incoming cool clean air so that a comfortable environment is achieved. Inadequate ventilation can cause stress, contributing to unsafe systems of work and high staff turnover.
• To ensure that the air movement in the kitchen does not cause discomfort.
• To provide sufficient air for complete combustion at fired appliances, and prevent the risk ofcarbon monoxide
• To be easy to clean, avoiding the build-up of fat residues and blocked air inlets which lead to loss of efficiency and increase risk of fire.
• To ensure suitable Room air pressure inside the kitchen premises without causing smoke, odor and fire to the dinning and other habitat areas.
• To ensure discharge of less polluted air into Atmosphere with suitable scrubbing system.
• To be quiet andvibration free

Selection of suitable Equipments having capability for air movement through high efficiency Grease Filters, proper engineering for Air distribution, and grouping of kitchen ancillary rooms as per activities etc. play important role for implementation of above considerations.
